Chef to speak about sustainable food decisions

Chef Chris Koetke will speak about sustainability and food during a free public lecture Wednesday, July 25 at 7 p.m. in Schaible Auditorium on the University of Alaska Fairbanks campus.
Koetke is the executive director of the Kendall College School of Culinary Arts in Chicago and the vice president of culinary arts for Laureate International Universities, a global network of accredited, higher education institutions around the world. He also is an active member and contributor to a number of national and international culinary councils. In 2005, Koetke started Kendall’s sustainability program that is now an integral part of the curriculum. Under his leadership, Kendall’s School of Culinary Arts was the first culinary training program to receive the Green Award presented by Foodservice Consultants Society International. The school was also awarded the Gold Ribbon Cooking School of the Year Culinary Academy Award for 2008 and in 2009, it was named the official educational partner of the National Restaurant Association Conserve Initiative. Additionally, Kendall is the only culinary school in the nation to receive Certified Green Restaurant status from the Green Restaurant Association for both the dining room and cafeteria.
Koetke is a certified executive chef and culinary educator. In 2009, the International Association of Culinary Professionals named him the cooking teacher of the year, and he is the co-author of the culinary-arts textbook, The Culinary Professional, published in 2010.
