October specials with Dining Services
October 12, 2020
Dining Services is celebrating October with a fish fry and, of course, all things
pumpkin!
October's superfood: Pumpkin
Pumpkins are the round, typically orange members of the winter squash family. Pumpkins
originated in Central America and have been a part of American cuisine for centuries.
If harvested and handled properly, pumpkins, like other winter squash, can last long
into the winter. Pumpkins are rich in the antioxidant beta carotene and pumpkin seeds
offer protein and key minerals. Peel, deseed and cook the pumpkin in a variety of
ways: boiling, roasting, pan sautéing or steaming. You can also roast the pumpkins
whole until tender and scoop out the cooked pulp. Don't forget about the seeds. Rinse
and boil in salted water for about 10 minutes, drain, dry and roast for about 10-15
minutes in a 350°F oven. We will be highlighting this superfood throughout this month
at all locations, so stay tuned!
Arctic Java specials (Grubhub only)
Enjoy a pumpkin spice latte or a blended cold pumpkin chai latte at Arctic Java this
month.
